Tell us about your career to date I started out at the Trinity hotel in Derry before going to Letterkenny to work in the Metropolitan Restaurant. I worked under Chef Gavin O’Rourke and received firsthand experience in the catering industry which was invaluable. Dillons Hotel Launched
The first phase of a major €1 million renovation project on one of Letterkenny’s most central hotels has been completed this week. Dillon’s Hotel on the Main Street has just been launched by its owners the McKeever Hotel Group, which purchased the property and began extensive improvement work in May 2014.
